Staff Pick: Alisha’s Aprons

This super simple butternut squash lasagna has been one of my favorite go-to recipes since I left my mom’s house, lol. It is one of those dishes that always pleases vegetarians and non-vegetarians alike; I am not a vegetarian, so once my good friend Alisha posted this video with ground turkey and sausage – I was like, “win, win”. This recipe looks like a lot of work, but it is deceptively easy, and comes together quite nicely. I hope you and your family loves this recipe & don’t hesitate to tell us what you think!

Lasagna Ingredients:
4 C Mozzarella cheese
salt and pepper to taste
2 tsp Italian seasoning
9 lasagna noodles (I say 10 in case one falls apart!)
4 C baby spinach
1/2 lb ground turkey
1/2 lb turkey sausage
1 heaping Tbsp Basil
1 heaping Tbsp sage

Butternut Squash Sauce:
4 lbs peeled and cubed butternut squash
2 cups chicken broth
1 cup heavy whipping cream
2 tbsp garlic
1/2 C parmesan cheese
olive oil
8 oz Mascarpone cheese

Mascarpone cheese substitute:
8 oz cream cheese
1/4 sour cream
2 Tbsp heavy whipping cream
